AMARONE DELLA VALPOLICELLA DOC TREMENEL
Just like similar wines, Amarone comes from
Corvina, Rondinella and Molinara grapes. The wine is obtained by leaving the grapes to dry
on grates. Unlike Recioto, which retains a sugary residue,
alcoholic fermentation is brought to completion in Amarone. Once the wine has been made,
it is left to refine in Slovenian oak casks for at least three years before being bottled
and stored in a dark cellar for one or more years. Amarone is a well-aged wine, and is
best when aged for a maximum of 15-20 years. The result is a ruby red wine that becomes
garnet with ageing. The scent is intense, ethereal and spicy. The contrasting flavour is
unmistakable: dry, austere, soft, vigorous, and velvety. It is perfect with wild game,
roasts, seasoned cheese, or the famous braised beef "brasato". Best when served
in large ballon-like glasses which allows it to breathe. |
