This wine is also named after vineyard in which the grapes are grown, indicating that these are top quality. They are the same variety as used for Valpolicella, dried in special rooms for a period
ranging from 120 to 150 days after harvesting (if weather and health conditions allow this). The most obvious effect is that when the grapes dry there is an increase in their sugar content and future extracts. After crushing, the must is placed in special containers and left to ferment for about one month. For this reason the temperature is raised, as cold weather would prevent fermentation from taking place. Once the wine has been seperated from the marc, it is put into small oak casks where the Recioto is left to age for about 2 years.
