SOAVE DOC SUPERIORE
PANVINIO
This is obtained with the same
grapeds used for the Soave DOC, grown on a specific piece of land named
"Panvinio". In this small vineyard, located at the foot of a hill, the production per vine is limited by pruning, in order to obtain grapes with a
noteworthy sugar content. If production exceeds estimated amounts, the bunches are thinned
out before being harvested. The grapes are harvested late to obtain both maximum sugar
content and maximum concentration of aromas. They are placed in special cases and poured
directly into the pneumatic press for light crushing, without allowing the skins to
crumble. They are then fermented with the skins for about 8 hours at around 20°C. This
method is used to obtain full-bodied wines with ample aromas and a considerably round
taste. The designation "Superiore" is attributed only to wines featuring at
11,5% natural alcohol content. The designation "Superiore" itself indicates that
it differs from "normal" Soave. It is straw yellow in colour, with a delicate,
slightly flower scent and its dry, soft, slightly almond tasting fragrance is perfectly
balanced. With these excellent qualities it goes with special white meat and fish dishes.
